The Black Forest Bar - Dark Chocolate & Cherry

Black Forest gâteau has been a cake for a hundred years. We thought it had waited long enough to become a bar.

Dark Belgian chocolate, hand-tempered and set in a faceted mould, then splashed by hand with white and yellow cocoa butter. No two are marked the same way. Break one and it gives way to a soft cherry filling - deep red, properly tart, and generous enough that it moves when you snap it.

The original is from southwest Germany, and it takes its name from the cherry brandy distilled there rather than from the forest. We've left the brandy out. Everything else is where it should be.

Made in the UK by the two of us. We don't make it in advance, so when it's gone it's gone.
