The shell is made from caramel chocolate — also known as blonde chocolate — a slowly caramelised white chocolate with a buttery, toffee-like flavour. The croissant is moulded by hand, 370g, roughly the size of one you'd find in a bakery. Inside is the part that makes it special. A rich pistachio filling made from pistachio paste blended with silky white chocolate ganache, layered with strands of crunchy kataifi pastry. Smooth, nutty, creamy, crispy — all in one bite.
